Ingredients

    Portabella Mushrooms, 600 grams
    *Peppers, sweet, red, fresh, 1 cup, chopped
    *laughing cow light garlic &herb light cheese, 2 serving
    Zucchini, 2 cup, sliced (finely diced)
    *Onion powder, 1 tsp
    *Kraft Mozzarella, Fat Free, .5 cup

Tips

you can also chop the stems and add them to the mix.


Directions

Mix all ingredients, except mushrooms and mozzarella. Remove mushroom stem. Spray the cap top with olive oil so they don't stick to the pan. stuff the caps and top with evenly divided mozzarella. Bake for 25 minutes at 375 degrees inside foil packet.

Serving Size: makes 3 large stuffed caps
