    1 smallish head cauliflower (2 pounds), chopped into largish pieces
    2-3 cloves garlic, chopped
    1.5 cups cooked chickpeas
    2 tablespoons tahini
    1 tablespoon olive oil
    1/4 cup chopped scallions
    1/4 cup parsley
    1/2 teaspoon salt
    2 teaspoons ground cumin
    1/4 teaspoon paprika
    2-3 tablespoons lemon juice
    3 tablespoons or so water


Cook the cauliflower (in water on stovetop or using microwave). Use blender to blend Cauliflower first, then add everything else. Chill for an hour after blending.

Serving Size: Makes 8 1/2-cup servings
