Introduction

This recipe hits the spot for flavor and heartiness. It's very simple to make and there should be plenty left over for a second meal. This recipe hits the spot for flavor and heartiness. It's very simple to make and there should be plenty left over for a second meal.
Number of Servings: 8

Ingredients

    *1 cup of dried lentils, soaked at least 2 hours
    *1 large onion chopped
    *1/2 cup of choped carrots
    *1 Johnsonville sweet Italian sausage link with the casing removed
    *1 small can of tomato paste
    *1 Tbsp Zanzibar Curry Powder from Savory Spice Shop or any curry powder containing sugar, mustard seeds, coriander, fennel, paprikam cumin, cayene, turmeric and cinnamon
    *4 cups of water
    *salt and pepper to taste (for nutrition calculation I used 1 tsp each)

Directions

~In a large pot over medium heat, add the onions, carrots, and sausage. Use your utensil to break up the sausage into smaller pieces.
~Once the sausage has browned and the onions have softened, add curry powder and tomato paste and still until well blended.
~Pour in 4 cups of water and bring to a boil.
~ Reduce heat maintaining a good simmer and cover. Set timer to 35 minutes.
~Stir about every 10 minutes, making sure to cover after each time you stir.

Serve with rice or cous cous.

Makes eight 3/4 cup servings.
