    1 TBS. coconut oil
    1 green plantain, sliced & quartered
    1/2 red onion, chopped
    1/2 green pepper, chopped
    1/2 small jalapeno pepper, minced
    1/4 tsp. dried oregano
    1/4 tsp. dried basil


Heat oil.
Add plantain and cook 2 minutes on each side.
Add the rest of the ingredients and sautee' until they are translucent.
Serve hot.

Serving Size: makes 2 servings.
