Ingredients

    3/4 c elbow macaroni
    1/2 lb ground beef
    2 Tbsp olive oil
    1 small onion, chopped
    1 shallot, chopped
    1 clove garlic, sliced
    1 green bell pepper, chopped
    1 pint home canned tomatoes (with juice), coarsely chopped
    2 ears cooked sweet corn, kernels removed
    1/4 c pasta cooking water
    3 Tbsp parmesan cheese

Directions

Cook macaroni according to package directions for al dente.

Meanwhile, brown ground beef, drain and remove from pan.

Cook onion, shallot and garlic in olive oil in same pan as ground beef until softened. Add green pepper and cook a few minutes longer. Stir in tomatoes, corn and ground beef. Simmer until pasta is done.

Before draining pasta add 1/4 c of the pasta cooking water to the sauce. Drain pasta and add to the sauce and allow to simmer with the sauce for 3 - 5 minutes.

Sprinkle with Parmesan cheese before serving.
