    2 1/2 c frozen mustard greens prepared in microwave
    10 oz ricotta cheese, part skim
    2 oz parmasean cheese
    3 eggs worth of egg beaters
    1/4 tsp salt
    dash of pepper
    2 small cans of mushrooms
    You can use fresh but you must sautee them before putting them in the recipe


Preheat oven 370

Steam greens in microwave until done. Drain excess water.

In bowl mix ricotta, parm, egg beaters, salt, pepper and mushrooms. Add greens. Mix well

Place in greased pan

Cook in oven 35-40 minutes until done.
