    1 pkg (8 oz) Barilla Three Cheese Tortellini

    2 cloves garlic finely chopped

    1 TBS olive oil or canola oil

    1 can light red kidney beans drained and rinsed

    2 medium carrots peeled and shredded

    1 32oz container beef broth

    2 cups water

    2 TBS basil pesto ( I used Classico)

    chopped parsley for garnish


I have used navy beans or even white kidney beans for this recipe and my family likes it either way.

This is a quick but hearty soup.


1. In a large soup pot heat oil over medium heat and add garlic to brown slightly.

2. Add beef broth and water and bring to a boil. Add tortellini and bring to a boil. Reduce heat and cook about 8 minutes.

3. Add drained kidney beans and shredded carrot. Heat for another 2 minutes.

4. Add pesto remove from heat.

Serve in bowls with chopped parsley and a sprinkle of low-fat shredded parmesan
