Ingredients

1 T Olive Oil
1/2 C onion, chopped
2 cloves garlic, minced
8 oz. tofu cut into bite size squares
1 C shiitake mushrooms (I used dried, reconstituted)
1 C frozen peas, cooked and cooled
1 C dry quinoa (prepared per package instructions)
3 T soy sauce
1/4 cup slivered almonds
Tips
I took the water used to reconstitute the shiitake mushrooms and used it to cook my quinoa.
Directions
1. Prepare the quinoa per the package instructions.
2. Warm the olive oil in the pan and saute the onion and garlic for a few minutes.
3. Add the tofu and half the soy sauce and cook for a few minutes
4. Add the shiitake mushrooms and peas and cook
5. Add the prepared quinoa, slivered almonds, and remaining soy sauce and cook through
