    2 cups boiling water
    1 cup old-fashioned oats
    3 tablespoons butter or margarine
    1 package dry yeast
    1/3 cup warm water
    1 tablespoon sugar
    1/3 cup brown sugar
    1-1/2 tsp salt
    4 cups unbleached flour, divided


In a small pan, add oats and butter to boiling water and cook 1 minute. Remove from heat and cool to lukewarm.

In a mixing bowl with a dough hook, dissolve the yeast in warm water with sugar. Add the cooled oat mixture, brown sugar, salt, and all but about 1 cup of flour. Knead with mixer (or by hand) until smooth, 3 to 4 minutes with a mixer or 6 to 8 minutes by hand. Add remaining flout to make a smooth dough.

Grease a large bowl well, add dough, turn to coat all sides, cover with plastic wrap, and let rise in warm place about 1 hour to double. When risen, punch down dough, remove to lightly floured board, and shape into 2 dozen rolls. Place in greased 9"x13" baking pan, cover with towel, and let rise to double. When ready to bake, bake at 350 degrees F for 25 to 30 minutes, until brown.

Remove from pan and separate to serve. Makes 2 dozen.
