    3 cups shredded zucchini
    1 2/3 cups splenda
    2/3 cups unsweet' applesauce
    2 tsp vanilla
    4 lg eggs
    3 cups all purpose flour
    2 tsp baking soda
    1 tsp salt
    2 tsp cinnamon
    1/2 tsp baking powder
    1/2 cup craisins
    1/2 chopped almonds


recipe says you can use whole wheat flour....


oven @ 350
mix zucc, splenda, vanilla and eggs
stir in remaining except nuts and craisins
stir in nuts and craisins
put in loaf, bake for about an hour and 10 mins
