Introduction

Ingredients
-
-2 cans Wild Planet brand no-salt Albacore Tuna (10oz)
*Note: You can use any tuna you like, just add less salt if your tuna comes pre-salted.
-Hain's Safflower Mayo - 2 Tbsp
-Olive Oil - 1 tsp
-Sweet Curry Powder - 1 Tbsp
-Cayenne Pepper - only if you like it spicy. I used 1/2 tsp
-Dash of salt and black pepper to taste
-Minced celery - 2 large stalks
-1/4 cup walnuts (or almonds, or cashews)
-1/4 cup raisins
-Chopped cilantro and lime juice to garnish
-Ginger Root (optional) - 1/4 tsp

You can plump the raisins before adding by soaking in warm water for 10 min then patting dry
Directions
1. Mix the Mayo, Olive Oil, and dry spices. Grate ginger in, if using. Taste the resulting sauce and adjust spices according to taste.
2. Add tuna AND the juice from one can to the sauce (we give the juice from the other can to our cats).
4. Stir in the diced celery, walnuts, raisins, chopped cilantro, and lime juice. If the tuna salad is not the consistency you like, you can add more Mayo or Olive oil.
5. Enjoy! Try it:
-over salad greens with grapes
-on a sandwich with cucumber slices & red onion.
-packed into half of a red bell pepper for a low-carb meal
-spread over a piece of toast with a small drizzle of honey
