    1 cup brown rice, cooked
    1 egg
    2 oz cooked turkey taco meat (substitute: beef)
    1 cup salsa
    shredded lettuce
    diced onions


-Preheat oven to 350 degrees.
-Beat egg and add cooked rice.
-Spray glass pie dish with nonstick cooking spray.
-Bake for 10 minutes, or until set and browning.
-Remove from oven and add cooked taco meat and salsa.
-Top with 1 cup shredded lettuce and diced onions.
