Ingredients

POTATOES:
1 2-lb bag of frozen cubed potatoes (Southern style hash browns)
1 can Cream of Onion soup
1 cup sour cream (half a container)
1/2 cup melted butter (one stick)
2 cups shredded cheddar cheese
1 cup chopped red onion
TOPPING:
1 cup shredded cheddar cheese
1/2 cup melted butter (one stick)
1 sleeve of Ritz crackers
Handful of bacon bits or crumbled bacon

Directions
Preheat oven to 350 degrees. While preheating, put potatoes in a 13x9 baking pan and partially bake the potatoes for 10 minutes.
Meanwhile, in a large bowl mix together the soup, sour cream, 1 stick of melted butter, 2 cups of cheese, and the red onion. Mix well.
Add potatoes to this mixture and mix to coat well, then spread evenly in the 13x9 pan.
Spread 1 cup of melted cheese all over the top of the potatoes.
Crush the Ritz crackers finely and mix in a bowl with one stick of melted butter. Sprinkle this mixture on top of the cheese on the potatoes.
Bake at 350 degrees for about 30 minutes or until bubbly.
Then sprinkle with bacon bits, switch the oven to broil, and broil for 5 minutes to get a nice crispy topping.
