Ingredients

2 Bananas, fresh, medium (7" to 7-7/8" long)
.5c Egg substitute, liquid (Egg Beaters)
2/3c. Almond Milk - Silk Pure Almond (Original)
2c Quaker Oats - Quick 1 Minute - Dry
1 tsp Baking Powder
1/3c Raisins
2 tbsp Baker's Angel Flake Coconut Sweetened
Tips
The original recipe I found used 3 tbsp. chocolate chips instead of the raisins & coconut - you can play around with add-ins!
Directions
Mix all ingredients but raisins & coconut in a large bowl. Set aside while you prepare muffin pan (grease or use muffin cups). Stir in raisins & coconut, divide mixture evenly to make 11 or 12 muffins. They will be almost full.
Bake at 375 F for 20-30 min. watching for the edges to turn brown. Let cool before attempting to unwrap, if using muffin cups - they'll stick!
