Ingredients

    4 oz boneless chicken breast, flattened
    1 cup sliced mushrooms
    1/8 cup port
    1/8 cup chicken stock
    1 Tblsp butter
    sprinkling of flour
    salt & pepper to taste

Directions

Spray medium frying pan with Pam. Heat to medium. Pound chicken breast thin, season, sprinkle with flour. Cook on both sides (about 2.5 minutes per side) until cooked. Remove & keep warm. Cook mushrooms in same pan. When browned, add port & chicken stock to pan, bring to boil & reduce to glaze-like consistency. Swirl in butter (can leave out for less fat/calories). Return chicken & mushrooms to man & toss to coat.
