Introduction

2 skins per serving makes for a pretty good side dish that will compliment most any meal. 2 skins per serving makes for a pretty good side dish that will compliment most any meal.
Number of Servings: 4

Ingredients

    4 small potates, with skin
    1 string cheese
    2 slices turkey bacon
    1 small onion
    2 tbsp. olive oil
    season to taste

Tips

You could put the potatoes in the microwave (whole) to soften them slightly first but I prefer the old fashioned method.


Directions

Cut potatoes in half length wise, use a spoon to scrape out some of the potatoe from each skin, cook bacon and chop into small pieces, dice onion into small pieces, mix all spices and olive oil together and drizzle on each skin, top each skin with onions and bacon, pull apart string cheese and top each skin. Bake at 375 for approximately 40 mins or until tender. Serve with sour cream.
