    48 nilla wafers/6oz, crumbled
    6 Tbsp butter melted
    .25 cup sugar
    1 tsp ginger
    1 tsp cinnamon
    a dash fresh ground nutmeg

    11oz fresh goat cheese soft.
    .75 cup sugar
    .5 lemon juiced
    1 lemon,zested
    1 tsp pure vanilla extract
    6 lg. eggs separated
    3 Tbsp all purpose flour.


This one can be done also without crust and will save some calories from butter and wafers circa 60 for each


Heat oven to 350 prep 9 inch springform.
mix the vanilla crumbs with butter,sugar,cinnamon,ginger and nutmeg,press this dough on bottom of pan and half way upp the sides.
set aside.

In med bowl mix together cheese ,sugar,lemon juice,vanilla and lemon zest beat on medium until smooth,beat in the egg yolkes 2 at a time,mix completely before adding the next set of eggs.
In another bowl, and with clean blades beat the egg whites untill firm but not dry.
Beat 1/3 of whites into cheese mixture,then gently fold in the rest of whites.
spoon batter into prepared pan and bake for about 40 min.Transfer to wire rack and let cool.

Serving Size: makes 10 slices at 1 inch each (or close to it)
