Introduction

Ingredients



    Chorizo, pork and beef, 16 oz (remove)
    Cheddar Cheese, 2 cup, shredded (remove)
    *Old el Paso Refried Beans - Fat Free, 1.75 cup (remove)
    *White Rice, medium grain, 3 cup (remove)
    Salsa, 1 cup (remove)
    Iceberg Lettuce (salad), 1 cup, shredded or chopped (remove)
    **Manny's Flour Tortillas, Burrito Size, 6 serving (remove)
    Sour Cream, 1 cup (remove)

Directions

first brown the chorizo then add the can of refried beans to the meat and mix well.

cook rice using one cup of rice and one cup water and the one cup of salsa, use the salsa as if it is water, bring to a boil then add rice, cover put heat on low and simmer for 20 minutes, remove from hot burner and let rice sit for 10 minutes, do not uncover!

layer all ingredients in the tortilla shell:
bean and chorizo mixture
salsa rice
cheese

wrap well (ends in first then roll up from bottom)
bake in 350 oven just long enough to get hot
put one spoon of sour cream on top and cover with lettuce.

Serving Size: makes 6 servings. Very large, do not plan on side dishs!
