Number of Servings: 6


    2 eggs
    1/2 cup skim milk
    1 tsp caramel or vanilla extract
    1/2 tsp ground cinnamon
    3 croissants, sliced in half
    Nonstick cooking spray


Beat together the eggs, milk, extract and cinnamon in a large shallow dish. Dip the croissant halves in the mixture, allowing to soak briefly.

Place in pan coated with nonstick cooking spray over medium heat. Cook until side is golden brown and egg mixture is set. Flip over and continue cooking for 1 to 2 minutes. Repeat with remaining croissant halves.

Serves 6.
