Ingredients

    1 package Lean Italian Turkey Sausage
    2 cans great northern beans (15 oz)
    1 can red kidney beans (15 oz)
    1 can diced tomatoes (28 oz)
    1 package frozen spinach (10 oz)
    1 sleeve celery chopped
    8 oz macaroni
    2 medium onions chopped
    3 tsp fresh garlic


Directions

Using large soup pot go twice around the pan w olive oil over low heat ,add minced garlic. Remove sausage from casing into pan. Increase heat to medium. Break sausage up while browning. Add onions and celery, cook until slighly soft. While this is cooking, rinse and drain beans. Add canned tomatoes and beans. Add approx 12 cups water or until ingredients are well covered. Increase heat add frozen spinach. Bring to boil. Once boiling reduce heat and let simmer approx 30 mins. Soup have thin consistency. Add UNCOOKED macaroni, reduce heat to low or remove. Macaroni will absorb liquid and thicken soup. Add seasonings to taste, salt pepper, etc. Should make at least 12 1 cup servings.
