    Shrimp, raw 16 0z
    2 tsp garlic, minced
    2 tsp thyme, fresh
    1 tsp lemon zest
    1 tsp lemon juice
    .25 tsp Adobo seasoning
    2 tbsp fresh parsley
    2 cups spinach, fresh
    8 0z whole wheat spaghetti
    1 tbsp pine nuts
    4 tbsp extra virgin olive oil


For extra spice, add red pepper flakes to taste when cooking shrimp.

If you don't like Adobo seasoning, use Mrs. Dash Lemon pepper instead.


1. Wash, peel, and devein shrimp, set aside.
2. Wash, chop spinach, set aside.
3. Cook spaghetti according to package directions. Drain pasta and return to pot. Reserve 1-4 TBSP pasta water.
4. While that's cooking, season shrimp with Adobo.
5. Heat oil in medium saucepan over low heat until warm (temp should register 180 deg on deep-fry thermometer). Add shrimp, garlic, thyme, pine nuts to pan. Stir to coat shrimp in oil. cook, stirring occasionally for 6 minutes.
6. Add spinach to pan, continue cooking until shrimp are pink and opaque-another 1-3 minutes.
7. Stir in lemon juice and lemon zest.
8. Heat pot with pasta on low, add reserved water as needed, if it's dry. Add shrimp mixture to pasta, stir until sauce and shrimp is well distributed.
9. Remove from heat, plate and sprinkle with fresh parsley. Serve immediately.
