    5.33 cups chicken, cooked and diced (2 pounds raw)
    2 pounds bacon, diced
    5 cups diced onion
    12 cups shredded cheese
    1 cup Ranch dressing
    32-10-inch tortillas
    butter or margarine


Cook bacon in a skillet (if not done already). Cook onions in the same skillet until crisp-tender. Add a handful of cheese to the top of 16 tortillas. Top each with chicken and bacon, then lightly drizzle Ranch dressing over the top. Top each tortilla with cooked peppers and onions; add remaining cheese to the top of each pile. Place one tortilla one the top of each of your stacks to make sandwiches. Melt a little butter or margarine in a large skillet; cook each tortilla stack 4-5 minutes per side over medium heat, until golden brown and the cheese is melted. Allow to cool. Cut each quesadilla into wedges. Flash freeze. Wrap in plastic wrap. Freeze in gallon bags when wedges are mostly frozen. To serve: Microwave 1-2 minutes. Serve with Ranch dressing for dipping.

Serving Size: Makes 16 quesadillas, 1 serving = 1/2 a quesadilla (approx 4 wedges)
