Introduction

Ingredients

2 lb Pork loin, visible fat removed
4 Tbsp Chili powder
3 Tbsp Salt
3 Tbsp Sugar
4 Bay leaves
Water to cover
1 small Onion, chopped
1 Lemon, chopped with rind
4 Bay leaves
Water to cover
1 cup PC Pulled Pork Cooking Sauce
Directions
Remove visible fat from pork loin. Place in container with chili powder, salt, and sugar. Cover with water and cover with tight fitting lid. Shake the container to mix. Leave in refrigerator overnight, 8 - 10 hours.
Remove pork from water and pat dry. Spray pressure cooker with Pam. Heat over high heat. Brown pork on all sides. Add onion, lemon, bay leaves and chili powder. Cover with water.
Pressure cook 45 minutes. Allow to cool completely before opening cover.
Remove pork and discard vegetables and cooking liquid reserving 1/2 cup. Shred Pork. Heat with PC Pulled Pork Sauce, thinning with cooking liquid to desired thickness.
Serve with garlic mashed potatoes, or on buns with coleslaw.
