    1 egg
    1 cup nonfat milk
    2.25 tbsp canola oil, divided (2 tbsp and 1.5 tsp)
    176 g onion
    49 g carrot
    68g green pepper
    105g chopped tomato
    53g celery
    4 tsp minced garlic
    dash Italian seasoning
    2/3 cup whole wheat flour
    1/3 cup white flour
    2.5 tsp baking powder
    1/2 tsp
    60g shredded cheddar cheese divided in half
    60g grated parmesan cheese divided in half


The nutritional information was calculated using the weights of the veggies I used. As long as the veggies measure approximately 2.5 cups total, no matter what veggies you use, the nutritional information should be similar.


Stir fry chopped veggies in 1.5 tsp canola oil. Add minced garlic, Italian seasoning and salt and pepper to taste.

Whisk egg in a bowl and add 2 tbsp canola oil and milk. Fold in flours, baking powder and salt until just mixed. Fold in veggies and half of the cheeses.

Spray cooking spray in glass pie plate. Pour veggie/batter mix in and top with rest of the cheeses. Bake for 30 minutes or until done.
