Simple, easy and healthy breakfast or snack muffin. Simple, easy and healthy breakfast or snack muffin.
Number of Servings: 12


    1 1/4 oats
    1 cup whole wheat flour
    1/2 cup sugar
    1 tbsp baking powder
    1/2 tsp salt
    1 tsp vanilla
    1 egg
    1 cup milk
    1/4 cup vegetable oil (I used canola oil)
    1 3/4 cup mixed frozen berries


Mix egg, oil, sugar and vanilla. Add dry ingredients and mix. Fold in berries (I chop mine because I use a mix of strawberries, raspberries, blueberries and blackberries and the strawberries are rather big). Line 12 muffin cups with paper or spray with nonstick spray. Fill 2/3 full and bake for about 20-25 minutes.
