    Brown Rice (1.5 cups dry cooked to package directions... yields a little over 3 cups)
    1 small jar of salsa
    1 can of diced tomatoes (no salt added)
    2 cans of red kidney beans (or use black beans), drained and rinsed
    1 tsp olive oil
    1 onion, diced
    4 cloves garlic, minced
    2 jalapeno peppers (or other preferred type/spice)


I like to put some diced avocado and/or a dollop of greek yogurt on top of a finished serving


cook brown rice per package directions; cook onion, garlic, and peppers in oil until softened; combine all other ingredients with cooked rice

Serving Size: makes 7 servings of about a (heaping) cup each
