Introduction

Ingredients
➢ 3 blocks Morinu silken tofu - firm (this is the tofu that comes in a box, not the chilled fresh tofu)
➢ ½ cup sugar (to your taste)
➢ 1 tsp. vanilla
➢ Apple jelly (as a glaze)
➢ Sliced fruits of your choice – as pictured: strawberries, blueberries, green kiwi and yellow kiwi.
Tips
You can reduce to tofu to two boxes for a thinner creamy layer in your tart - this reduces the total recipe by 200 calories. You can load it with more fruit this way!
Sometimes I add a little lavender sugar for a more elegant tart.
Other yummy fruits to use - mandarin orange slices, fresh peaches, pineapples - skies the limit on the fruit you can use!
Directions
Roll out ready-made pie crust into a tart pan and bake according to single crust instructions.
Reduce oven temperature to 350 degrees .
Squeeze tofu blocks through cheese cloth to get rid of excess water.
Use an immersion hand blender to mix in the sugar and the vanilla until the mixture is smooth.
Pour the mixture into the baked shell. Wrap foil around the edges so they don't get too brown. Bake for 30 minutes until the tofu firms up.
Assembling the fruit tart:
When the tart has cooled, brush a bit of warmed jelly across the top and then decorate the tart as desired. Melt more jelly to brush across the tops of the fruit to give it a nice glaze.
