    Olive oil, 1 TBSP
    Red Onion, 1 medium, chopped
    Garlic, 3 cloves, chopped
    Egg, fresh, 8 large, scrambled
    Shredded Pork Tenderloin, 16 oz
    Zucchini, 1 cup, chopped
    Basil, chopped 2 tbsp
    Salt, 1 dash
    Pepper, black, 1 dash


Preheat oven to 350.
Saute onions and garlic in oil over med-high heat until onions are caramelized. Remove from heat.

In a bowl combine eggs, pork, zucchini, basil, and S & P. Add onions and garlic and mix thoroughly. Pour evenly into a large, greased baking dish. Bake for 30 minutes or until center is set and no longer jiggles. Place under broiler for 3-5 minutes to brown top.
