    1/3 cup or 1 ounce WW shredded cheese
    9 tbsp (about 1/2 cup) EggBeaters
    1 large mushroom chopped or sliced
    1 cup fresh spinach chopped
    1 tbsp Benecol cholesterol-reducing spread


Melt Benecol in skillet, add chopped mushroom and spinach, cook until wilted and tender. Add EggBeaters and sprinkle cheese on top. Cook until firm on bottom, then fold into an omelet and cook until the eggs are cooked through. (I'm really bad at omelets, so I usually just scramble it!)
