Ingredients

1lb.Lean Ground Beef
2 cups Brown Rice
1 Large Onion
1 can Campbell's healthy request Tomato Soup
8 Large Cabbage leaves
1 cup Spinach
1 tbsp Cumin ( optional )
1 tbsp Black Pepper
Tips
These work well for those who make meals ahead and take their lunches to work.
Directions
Turn oven on to 375 degrees.
Cook brown rice according to package directions.
Dice Onion and cook with beef in skillet until beef no longer pink.
Steam Spinach until fully wilted. ( or use canned spinach drained of all liquid ).
Boil large pot of water and put Cabbage leaves in for approx 8 minutes, gently dip out into a slotted bowl over sink. Let cook until you can touch them without getting burnt.
In a large bowl add beef / onion mixture , stir in Cumin and Black Pepper, add brown rice, mix well, fold in spinach, add 1/2 cup of the Tomato Soup. Lay leaves out and divide the beef mixture equally between each leave. Roll each leave up and place rolled side down in a 13" by 9 " pan, pour remaining Tomato Soup over the rolled leaves, cover with foil and back in oven 30 minutes. Let rest on stove top additional 8 to 10 minutes then serve.
