Introduction

Rather spicy, but if you cut down on the chili pepper it will moderate the heat. Rather spicy, but if you cut down on the chili pepper it will moderate the heat.

Ingredients

    Canned chickpeas
    Canned sweet corn
    3 cups fresh green beans
    1 Sweet, red pepper
    1 hot chili pepper
    3 cloves garlic
    4 Tbs olive oil
    1 Tbs vinegar

Tips

Use whatever fresh veggies are in season. Would be good with chopped cucumber or zucchini.


Directions

Steam green beans with chopped chili peppers.

Prepare quinoa as directed.

Chop sweet peppers and garlic.

Add canned veggies to beans, quinoa, peppers and garlic.

Dress with olive oil and vinegar and chill.

Serving Size: makes 8 1-cup servings
