Introduction

Ingredients

    2 Spaghetti Squash, roasted and shredded (about 6 cups)
    4 cups marinara
    2 cups cooked broccoli
    1 cup cream cheese
    1.5 cups mozzerella cheese
    salt and pepper to taste

Tips

Broil for a minute or two to brown the top of the casserole. Use reduced fat dairy to lower calorie count. I prefer more natural, whole ingredients versus the "lighter" alternatives. Can also be used as a great side dish.


Directions

Roast the Spaghetti squash at 375 for about 45 minutes or until easily shredded with a fork. Heat marinara in a sauce pan and stir in cream cheese until melted and blended. Pour marinara mixture over shredded spaghetti squash and broccoli. Stir compeletely. Add in 1 cup of mozzerella cheese and stir. Put in a baking dish and sprinkle remaining cheese on top. Bake at 350 for about 30 minutes.
