    2 cups part-skim ricotta
    2 eggs
    1/2 cup reduced fat sour cream
    1/2 cup vanilla protein powder
    1/4 cup granulated Splenda or stevia
    Grated rind and juice of 1 lemon
    1 tsp vanilla extract


Preheat oven to 350 degrees

Process all ingredients in blender until smooth.
Spray 9 inch pie pan with cooking spray. Add blended mixture.. place on top rack of oven. Place flat pan of water on lower rack. Bake 30 - 40 minutes. Chill before serving .
