Introduction

Ingredients

    2lb Ground Turkey, lean
    2.5 cups shredded cheddar
    1/2 pakage cream cheese (optional)
    6 green bell peppers
    1/2 cup bread crumbs
    2 eggs
    1 packet taco seasoning
    1 can rotel, 16oz mild
    1 can 16oz enchilada sauce, mild
    2 teaspoon salt
    2 teaspoon pepper
    2 teaspoon cummin
    2 teaspoon onion powder
    2 tbsp olive oil

Tips

Delicious with banana peppers too!! Goes great with rice and beans on the side!


Directions

Brown ground turkey in a frying pan with olive oil, spices and taco seasoning. Stir bread crumbs and 1 1/2 cups cheddar cheese and cream cheese (optional for an extra creamy addition) in a mixing bowl. Cut bell peppers in half and stuff with turkey filling and place snugly into a 9x11 inch baking dish and pour can of rotel and enchalada sauce evenly over peppers. Sprinkle remaining cheese onto dish and cover with tin foil. Bake in the oven on 350 degrees for 50 minutes and let cool 5 minutes before serving. Enjoy!
