    4 sweet bell peppers
    2 cups cooked rice
    1 lb cooked lean ground beef or turkey cooked with taco seasoning
    1 cup corn
    1 cup black beans
    1 cup low fat shredded cheddar
    1 cup salsa for topping


brown ground turkey, cook rice
mix all ingredients except cheese and salsa. cut peppers in half and remove seed. stuff. top with cheese back at 400 for 15 to 20 mins
