This has been adapted from a traditional south african recipe (very rich and high in calories) to make it more 'diet' friendly but still attempting to get that 'rich' taste.

Ingredients

    Chili flakes, 0.5 tspn
    Cauliflower, raw, 490 grams
    Paprika, 0.5 tsp
    Garlic, 2 cloves, minced
    Cheddar cheese, 40g
    Milk, 2%, 50 mL
    Margerine, 1 tbspn
    Egg, fresh, 1 medium
    Chutney, 1 tbsp
    Baking Powder, 0.5 tsp
    Salt, 1 dash
    Pepper, black, 1 dash
    salt and pepper to taste

Directions

1) Boil cauliflower and chili till tender.
2) Drain cauliflower and mash in a bowl.
3) Add grated cheese, margerine and blend well with a spoon.
4) Beat egg, milk, chutney, baking powder and spices together. Add to cauliflower mixture and mix thoroughly.
5)Spray a ceramic dish (or 3 smaller ones) with low cal vegetable oil. Spoon mixture into bowl.
6) Bake, in a pre-heated oven, at 180 degrees Celsius for about 20 - 25 minutes or until golden brown on top.

Serving Size: Makes 3 servings of about 1 cup
