Introduction

These aren't in the slightest bit healthy, but in small portions, this is a FANTASTIC side dish. Freezes very well - so you can have small batches ready to go with your favorite BBQ or grilled chicken. YUM! Ingredients

    1 1/2 cup grits (cooked as directed with 6 cups water)
    1 lb American cheese, plus a dash of Parmesan
    3 beaten eggs
    3/4 cup (1 1/2 sticks) butter
    2 tsp seasoned salt
    1 tsp salt
    1 tsp Tobasco
    1 tsp paprika

Directions

Preheat oven to 300°F. After grits are cooked and hot, add cheese, butter, eggs and seasonings; pour into a buttered baking dish (or several smaller ones). Bake for an hour or freeze for later use. (If baking from frozen, add an additional 15 to 20 minutes to cooking time.
