These are extremely moist, chocolatey, and low-fat cupcakes. A bonus: they're vegan! These are extremely moist, chocolatey, and low-fat cupcakes. A bonus: they're vegan!
Number of Servings: 24


    3 cups whole wheat flour
    2 cups granulated sugar
    6 tbsp unsweetened cocoa powder
    2 tsp baking soda
    1 tsp salt
    2 cups water
    3/4 cup unsweetened pear sauce (applesauce can be substituted)
    2 tbsp. white or cider vinegar
    2 tsp. vanilla extract.


Preheat the oven to 350 * F and line or spray a muffin tin. In a large bowl, combine the flour through salt. Add in the water, pear sauce, vinegar, and vanilla until the batter is smooth. Distribute the batter among the mufifn cups, filling them about 2/3 of the way full. Bake for about 25 minutes or until a toothpick inserted into the center comes out clean. Allow to cool in the cups completely before removing and serving. Makes 24 cupcakes.
