    2 tbsp hot patak curry paste
    1 tbsp olive oil
    1 medium yellow onion diced
    4 carrots sliced
    1 tsp curry powder
    1 tsp turmeric powder
    1 tsp crushed chili flakes

    4 medium red potatoes cubed
    200 grams frozen green beans
    3 cups chick peas
    2 large tomatoes diced
    2 cups vegetable stock

    1 cup lite coconut milk
    1/2 c frozen peas


Crock pots very in size and heat so make sure you have lots of cooking time the first time you try this recipe.
I like to finish mine with a dollop of greek yogurt in my bowl....makes it creamier and mellows the spice a tad.


Heat oil in pan and add first group of ingredients. Saute until tender

add to large crock pot and then top with potatoes, green beans, tomatoes, chick peas and vegetable stock

Cook on medium 4 hours and then on high for 2 hours.
Then add milk and peas and cook another half hour.

Serving Size: Makes 16 one cup servings
