I use sandwitch ham. Add salt and pepper to taste. I use sandwitch ham. Add salt and pepper to taste.
Number of Servings: 6


    4 cups thinnly sliced potoatoes (about 3 med.)
    1/2 cup chopped onion
    cubbed ham (about 6 oz)
    3 Tbls butter
    3 Tbls flour
    2 1/2 milk
    Salt and pepper to taste.


Grease a 4 quart cassarole dish. Slice pototoes, chop onions and cube ham.
In a 3 quart sauce pan, melt the butter. Add the flour and stir until smooth. Remove from heat and add the milk. Stir until all lumps are gone. Cook over low heat until it boils stirring frequently. Boil and stire constancely for 1 minute.
Place a layer of potatoes (1/3 of the potatoes) in the bottom of the cassarole dish. Top with a 1/2 the onions and 1/2 the ham. Top with 1/3 of the sauce. Place another layer of the potatoes then top with the other half of the onions and ham. Top with 1/3 of the sauce. Place the rest of the potatoes on top. Top with the last of the sauce. Put several "dabs" of butter on top.
Oven: Cover and cook 1 hour in 350 degree oven.
Microwave: Cover and cook on high for 15 minutes. Uncover and cook on high another 15 minutes.
Test with a knife for potato doneness. If needed, cook a little longer.

Serving Size: makes 6 - 4 x 3 inch pieces
