    *2 cups cooled cooked white rice
    1 cup Lundberg Wild Blend Brown Rice cooked in 2 cups of water and cooled.
    1 cup chopped Cucumber (peeled)
    1/2 cup chopped red onion
    1 cup Celery diced
    1/2 cup chopped green onions with tops
    2 TBS mint leaves chopped
    3 TBS fresh parsley chopped
    4 TBS fresh squeezed lemon juice
    Juice of one orange
    zest of lemon and zest of the orange
    1/4 cup olive oil
    1 cup chopped walnuts
    2/3 cup dried sweetened cranberries


Cook and cool rice. Chop all the vegetables, mint, parsley, cranberries and nuts. Mix everything together, including the walnuts and add zests, lemon and orange juice, and olive oil. Refrigerate for at least 2 hours before serving.
