Introduction

This Ratatouille is quick, and low in fat. This Ratatouille is quick, and low in fat.

Ingredients

    2 teaspoons olive oil
    1 medion onion chopped
    i red pepper
    1 yellow pepper
    1 zucchini
    1 eggplant 2 cloves of garlic
    6 medium tomatoes
    1 cup arugula
    1/2 cup fresh basil
    salt and pepper to taste
    water

Tips

Eat alone or Imake lasagna with the filling. I use this instead of ricotta cheese and with whole wheat lasagna noodles. I add vegan cheese to the top an bake


Directions

add olive oil to pan, add onion and saute. add other vegtables one at a time saute a few minutes before adding the next one. Slowly add a small amount of water when needed to avoid sticking. Cover and let cook for 15 - 20 minutes. Stir occasionally
