    Sausage beans and rice

    2 tablespoons oil
    2 thirds to 3 fourths pound smoked sausage (like kilbasa) cut into 2 inches pieces.
    1 large onion finely chopped.
    2 cloves garlic chopped.
    1 teaspoon oregano leaves.
    1 half teaspoon basil.
    Dash of tobasco.
    2 1 pound cans of red beans.
    Cooked rice.


Heat oil in skillet.
Brown sausage and remove from pan.
Sauté onion and garlic until soft.
Add sausage and remaining ingredients including bean juice except rice.
Cover and simmer over low heat for about 30 minutes.
Mash a few of the beans during the last 5 minutes.
Serve over rice.
