Ingredients

1/4 medium onion or 1/2 small (about 50 grams) chopped
Half a medium potato (about 90-100 grams) grated
1 tbsp veg. oil
2 eggs.
Tips
Instead of vegetable oil, spray Pam's cooking oil for a lower-fat version. This is a complete breakfast though and keeps you full and satisfied for several hours & with good energy to start the day... serve with some chopped cucumbers or tomatoes on the side to increase your intake of raw veggies.
Directions
Chop the onion finely. Grate the potato. Add to medium frying pan with 1 tbsp oil (less if you desire lower calories). Stir fry until the potatoes start to get crispy (do not stir constantly).
Beat the eggs and add. Simmer on low-medium heat until the eggs are cooked on the bottom and still shiny on top. Remove from heat & serve.
