    4-5 medium russet potatoes
    3 medium red potatoes
    1 cup vegetable stock
    1.5 cups chopped onion
    1 cup parmesan cheese (reserve some to top)
    1-2 tbsp (depending on taste) garlic powder
    salt and pepper to taste


Chop potatoes and boil with onions until soft. Drain and use mixer with paddle attachment (or potato masher) with vegetable stock, parmesan cheese, garlic, salt and pepper to smash to desired consistency. Place in oven safe dish and top with reserved parmesan cheese and bake uncovered in 375 degree oven for 25-30 minutes.
