    1 medium onion, peeled and chopped
    2 tablespoons butter
    1 pound frozen peas
    3 cups chicken broth
    salt and pepper to taste


If desired, garnish with cultured dairy - yogurt or sour cream - but count the nutritional info separately.


Saute onion gently in butter over low heat until tender. Add broth and peas. Simmer about 15 minutes. Blend until smooth. Season to taste.

Serving Size: Makes 6 1-cup servings
