Ingredients

    4 (14oz) cans of whole tomatoes or chopped fresh tomatoes
    1 (12oz-14oz) can of tomato paste
    2 small carrots
    2 TBSP onion powder
    4 cloves garlic
    2 small jalapeno peppers
    8 leaves of fresh basil or 2 TBSP dried
    2 TBSP rosemary or 2 sprigs of fresh rosemary
    4 TBSP balsamic vinegar (up to 1/4 cup)
    salt & pepper to taste

Tips

This recipe omits olive oil and Parmesan cheese but these can be added however the nutritional value would have to be altered.


Directions

Puree carrots, tomatoes, garlic, jalapeno peppers, basil and rosemary in food processor and pour into saucepan with rest of ingredients, Stir until well blended. Heat on medium low stirring occasionally for about 2 hours. Cut the heat back to low if it is bubbling (as this can cause a mess or burns). This recipe can be doubled and put in containers to store in freezer which is what I usually do.

Serving Size: makes 8 cups, serving size 1 cup
