Ingredients

0.75 cup Sweet Corn, Fresh
1.50 cup Beans, black, drained and mashed
1 cup Brown Rice, medium grain
1 serving Yellow Bell Pepper, 1 serving equals 1.8 oz or about 10 strips
3/4 cup Knudsen Light Sour Cream
0.75 cup Kraft Shredded 2% Mexican Four Cheese blend
8 oz Jennie-O Lean Ground Turkey
taco-type seasonings (chili powder, cumin, onion powder)
small amount of salsa and extra for serving (not included in nutrition)
3 oz Tortilla Chips
Directions
Cook ground turkey with pepper and onion; add mashed black beans and a little salsa & taco seasoning. Set aside.
Spray an 8x8 inch square pan with cooking spray. Crush tortilla chips and spread 1/2 of them on the bottom of the pan. Top with rice for the second layer (you can also season the rice with a little salsa or cumin if you like).
For layer three, add the corn and spread out. For layer four, spread the meat and bean mixture.
For layer five, sprinkle on the rest of the crushed tortilla chips.
For layer six, mix a little taco seasoning, cumin, chili powder, or hot sauce (or a little of each) into the sour cream and spread over the top. Lightly sprinkle the cheese over the top and bake for about 20 minutes in a 375 degree oven.
