Incredibly healthy, simple, quick, easy, summer recipe that everyone will enjoy, even your taste buds. I made up this recipe while camping out in my backyard with my 2 younger brothers. They loved picking out the ingredents from our garden and from our local farmer's market. Ingredients

    9 oz Chicken
    1 medium zucchini
    1 medium tomato
    1/2 medium red bell pepper
    1 small red onion
    1 1/2 cup fresh brocoli
    2 tbsp Extra Virgin Olive Oil
    2 garlic cloves (or 1 tsp of garlic powder)
    1/2 tsp freshly ground pepper
    1 tsp sea salt
    5 freshly chopped basil leaves
    1tbsp plus 2 tsp Red Wine Vinager

Directions

First prepare the zucchini, tomato, red bell pepper, and red onion by cutting them into 1/2inch rounds. Then take the fresh brocoli and cut the bigger pieces into halves so that they will be easier to eat. Cut up 2 garlic cloves and mix it into extra virgin olive oil. Brush all the veggies withe the olive oil mixture and sprinkle with salt and pepper.
Once all the veggies are prepared preheat the grill to medium heat. I used frozen chicken tenderloins for this recipe but fresh chicken would be the best. .( If you want this to be a vegetarian dish replace the chicken with 1 small eggplant and cook with zucchini and brocoli) Place the frozen chicken on the grill for 12 minutes on one side. At then same time place the grill pan on the grill with zucchini and brocoli first for 3 minutes, then place the rest of the veggies on for a remaining 28 minutes.
Once the chicken is finished cooking on that first side, flip them for 11 more minutes. After the chicken is done on that side, take them off the grill, and cut them into 1/2 inch pieces and add them onto the grill pan with the veggies for 5 minutes to let the flavors mix. ( if you use a stove top for the frozen chicken cook the chicken with the veggies for 15 minutes on one side then 15 minutes on the other, or until the internal juices run clear)
Once those 5 minutes are up take the chicken and veggies off, arrange on a platter, drizzle with vinager and top it off with the freshly chopped basil leaves. Enjoy!
