Ingredients

    Ground turkey, 20 oz
    1 cup each chopped onion and mini tri color chilis
    1/4 cup chopped garlic
    Chicken broth, 2 oz
    4 peppers, any color
    Season with your favorite seasonings
    4 wedges low fat Laughing Cow cheese
    1/2 cup shredded cheddar or your choice of cheese

Tips

Peppers can be cooked first in the microwave


Directions

Cook turkey, onion, peppers garlic and spices in chicken broth, until done and most of the broth has cooked off, then stir in laughing cow cheese. Arrange peppers in microwave dish or crockpot, stuff with the turkey mixture and cook covered in the microwave or slow cook until done. Sprinkle with cheddar cheese before serving.

Serving Size: one pepper is a serving
